MODERN STANDARD COFFEE

Modern Standard are a female-founded, specialist roastery based in Fife in Scotland, on a mission to make exceptional coffee accessible while caring for people and the planet.

They work directly with farmers around the world, paying fair prices and building long-term relationships that support communities and ensure consistently high-quality beans.

From bright, fruit-forward Ethiopian lots to the rich, chocolatey notes of their signature 'Momentum' blend, every cup celebrates the craft and care behind the beans. The state-of-the-art roastery allows them to create both seasonal small-batch coffees and larger-scale blends without ever compromising on quality.

Modern Standard produce over 100L of coffee chaff a day. This is produced when roasting the coffee, and it has a biscuity smell. It is a nutrient dense by-product of roasting, and Modern Standard donate it to a local community garden, The Ecology Centre,  to enrich their compost.

At Lockdown Bakehouse, everything starts with exceptional ingredients. From UK-milled flour, top-quality butter, free-range eggs, and everything in between, all ingredients are from suppliers who share their ethos.

Their team of bakers warm the ovens from 4 am each day to ensure fresh, handcrafted pastries arrive at Journal just in time to start your day.​Each pastry is hand-laminated using traditional techniques, producing layers that are crisp and rich with buttery flavour. The same care goes into their breads, where long fermentation develops natural texture and a delicious depth of flavour. By taking the time to craft every dough with the finest ingredients, Lockdown Bakehouse ensures that every bite is a little moment of indulgence.
